If you were to ask me my favourite food, I might say steak or burgers... but I'd be lying. My real favourite food is the lowly potato. J'ADORE LE SPUD! I love potatoes mashed, french fried, boiled, scalloped, baked, roasted... any way will do. If you take me to a fancy steak dinner, I might ooh and ahh about the steak, but what I'm really looking forward to is my big side order of frites. When I go for buffet with my in-laws, I casually sneak over to the kid's section for a few fries with gravy (I know, I'm not eating my money's worth but fries are what I like!). If I say I want Greek food, what I'm really craving are those roast potatoes that nobody likes. When I order clam chowder, I'm secretly hoping for more potatoes than clams. You get the point. It's that bad.
Vince and I recently had a BBQ with his family for Father's Day. I carefully selected some frozen bison burgers for the grill - I wasn't too hungry and that was the only thing I really felt like eating. Patrick and Vince spent some time cooking tons of chicken, burgers, sausages, longanisa, and steak. When they were finished grilling, we all headed up to the condo to eat. The table was set, the wine was poured, and then a big bowl of homemade potato salad was plunked right in front of me. MMMMMM, I said, as I finally felt my stomach start to grumble. I put a big scoop on my plate and had a bite - it was the best potato salad ever! Simple, classic, and not overdone. I've tried a few potato salad recipes in the past - they never turned out well so I had pretty much given up. I was forever destined to eat potato salad, but never cook it.
That night, a glimmer of hope started bubbling up within me as I shyly looked up with my mouth full of potatoes and asked my father-in-law, "Da, d-d-d-did you make this?" He was surprised that I took such an interest in the potato salad. I started naming some ingredients and he replied with four magic words: "potatoes, eggs, mayonnaise, mustard" and that was it. No measurements, ratios, quantities... just four ingredients. That was my recipe. The next day, when Vince and I went for our weekly grocery run, I carefully picked out 5 large white potatoes that would form the basis for my recipe. For the next 5 days, I planned out the recipe in my head and set out to create my perfectly delicious potato salad.
Da's Potato Salad - Recipe 1 of 30 in my 101 in 1001
5 white potatoes, cubed (I didn't even peel them - I can be a really lazy cook at times)
4 large hard boiled eggs
1 cup half-fat mayonnaise
3 generous heaping teaspoons mustard
salt and pepper to taste
1. First, I boiled the potatoes until fork tender. I boiled the eggs at the same time - 12 minutes for perfectly hard boiled eggs - and it was about 3 minutes later that the potatoes were ready.
2. I dunked the eggs in cold water for a little while before peeling them.
3. After peeling, I threw all the eggs into a bowl and just mashed them apart with a fork (again, lazy).
4. I drained the potatoes, tossed them into the bowl with the eggs, and seasoned with salt.
5. Then I added 1/3 cup of mayonnaise and 1 heaping teaspoon of mustard. This is where you can go crazy in the recipe. I happened to have Kozlik's horseradish mustard and grainy creole mustard in my fridge. I didn't want to go too spicy so I picked the creole. I love the texture of the mustard as it contains whole mustard seeds but you can use whatever mustard you like. My father-in-law used classic yellow mustard (e.g. French's) and that was really yummy too.
6. I mixed everything together until I could gauge the consistency - if too dry, I added another 1/3 cup of mayonnaise and 1 heaping teaspoon of mustard. By the time I was happy with the consistency, I had used about 1 cup of mayonnaise and 3 heaping teaspoons of mustard. Use more or less to your liking.
7. Finally, I tasted my creation and topped it off with some freshly ground peppercorns (adjust the seasoning here, if necessary). I gave everything one more good mix before scooping a sizable mound of potato salad onto my plate. I only managed to take four photos before having to put the camera down in favour of the fork.

101 in 1001
A few years ago, I decided to start a top 10 before 30 list. I very diligently made my list, created a few rules around what I was doing, and tacked the list up on my refrigerator so it would stare me in the face every single day. There were things I wanted to do and I wanted to do them before I hit the big 3-0. Well, let's just say that day has come and gone and I'm not sure where the list is today. It's certainly not on my fridge (but in my defense, I've moved!). I remember some of the items on the list and I also remember that I haven't done them. Some of the items were:
- Go on a wildlife safari in Africa.
- Visit the Galapagos Islands.
- Take two more cooking classes.
- Go bungee jumping.
I can't remember what else was on the list but they were equally lofty to-dos. Too many lofty items on a list makes Lesley a lazy girl.
Today, I'm taking a different approach. I have a ton of things I want to do and, while I don't really have a problem motivating myself to do them, I like making lists, keeping track of things, and checking stuff off. I've noticed that a couple of my favourite bloggers have started lists of 101 in 1001. Essentially, these are lists of 101 "things to do" to be accomplished in 1001 days. Brilliant! I've spent a few days creating my own list and my journey starts today.
My list contains things that are fun that I can't wait to do mixed with things I'd like to do that I've been putting off for a little while. I've combined my big lofty dreams with some simple everyday events. Now doesn't this sound like fun? Won't you play along?

I was - and still am - open to changing the items on my list as 2.74 years is a long time and, let's face it, I have a slight tendency to change my mind. Crossed out items will be replaced with a new goal.]

Our First Woofstock
Vince and I have been together for over 8 years now. A lot of things have changed in this time but there has been one constant: Vince has always wanted a dog and I've always said no. The only exception was a brief period in 2005 when we almost put down a deposit for a chihuahua puppy and very nearly adopted a white hound from the Toronto Humane Society. Still, we ended up dogless. It just wasn't the right time.
Five years later, we find ourselves in 2010 and thinking very seriously about getting a puppy in the spring of 2011.
Vince's friends at work told him about Woofstock - a 2-day event happening this weekend in the St. Lawrence market area. Oh. My. Goodness. We were literally transported into the land of adorable and friendly dogs! I had my camera ready to take a few snaps for the blog but I was so preoccupied and overwhelmed that I took only one photo. And not a very good one at that. Thus, ALL the photos in this post are courtesy of my dog-crazy hubby Vince who was clearly not as easily distracted as I was by these irresistibly furry creatures. If LWP ever branches into pet photography, I will definitely make Vince the lead photographer. Good job honey!
As we were walking around, Vince's friend, Michelle, turned to me and told me about these dogs she saw with dyed fur. Ok folks, I'm talking pink and purple. Interestingly, I had recently read an article about dogs in China dyed to look like wild animals (hehe, I thought it was purple dogs being all the rage in Japan but I must have misremembered)... anyway, it's a good thing I was warned because I'm not sure how I would have reacted to these colourful pets otherwise. I can, however, definitely say that I will not be introducing you to a purple chihuahua next spring. In fact, not ever.
Vince and I have been doing a lot of research on different breeds and we are still drawn to chihuahuas. We were very eager to meet a few chis and their owners at Woofstock to learn more about the breed firsthand. Lucky for us, there was no shortage of friendly owners and sociable chihuahuas in attendance so we received some good information and got to interact with a few chis too. Oh, we definitely love this breed very much!
Vince would like me to remind you: ALL photos by VINCE FOO (but I kept some of the doggies calm for him - yes, that's my hand in almost all the photos of the chihuahuas). :)

As we were walking around, Vince's friend, Michelle, turned to me and told me about these dogs she saw with dyed fur. Ok folks, I'm talking pink and purple. Interestingly, I had recently read an article about dogs in China dyed to look like wild animals (hehe, I thought it was purple dogs being all the rage in Japan but I must have misremembered)... anyway, it's a good thing I was warned because I'm not sure how I would have reacted to these colourful pets otherwise. I can, however, definitely say that I will not be introducing you to a purple chihuahua next spring. In fact, not ever.
Vince and I have been doing a lot of research on different breeds and we are still drawn to chihuahuas. We were very eager to meet a few chis and their owners at Woofstock to learn more about the breed firsthand. Lucky for us, there was no shortage of friendly owners and sociable chihuahuas in attendance so we received some good information and got to interact with a few chis too. Oh, we definitely love this breed very much!

Jaymie | Portraits | TRU
A few weeks ago, I went to my first Thursday Round Up!
David Dvir started this learning and sharing group for photographers of all skill levels - the idea is to get out and shoot at a different location each Thursday, while meeting like-minded people in the process. For my first TRU, a group of us gathered at the Distillery District. Many Torontonians currently have a love affair with this part of the city (myself included) and it's not hard to see why... there's gorgeous brick everywhere!
Courtney brought her good friend Jaymie - a talented make-up artist who also loves to model. Jaymie is such a fun model who gives you so much to work with. From a variety of different expressions to a plethora of dynamic poses to her gorgeous mane of tousled blond hair, Jaymie is truly a photographer's dream. Without further ado, here are a few of my favourite shots!

Belle | Lifestyle
My bestie Belle got a new haircut... sexy bangs! Her hot new 'do + my brand new backdrop set = smokin' photoshoot. We took a whole bunch of photos and Belle asked me to send her a preview so she could use it for her Facebook profile photo. ALRIGHT! I love seeing my photos used as other people's profile pics... it brings a smile to my face every time I see them. I selected my favourite photo from the session (below) and was thrilled when she liked it too... I don't think I've ever seen Belle look more adorable and I think it captures her spirit perfectly.
Of course, we just had to do a wide variety of shots because Belle's look is really versatile. So fun!
To end off this post, I know I've been neglecting the blog lately but I promise that there are a lot of updates in store for y'all. Vince and I have lots of plans on how we want to move forward with LWP so a lot of exciting announcements will follow... hopefully soon, very soon!
